What do you serve with salmon?

This is a typical question we lifelong Seattleites get. That, and how do you cook salmon? We’ll cook a salmon some other day. But my favorite quick side dish to serve with salmon (or any fish for that matter) is Lemon Rice. And here is how I make it.

If you have a rice cooker, that is the easiest way–and quite frankly the only way I make rice. Otherwise, I burn it. Can’t do the pot on the stove method to save my life. But a rice cooker? That I can do. So put the usual amount of rice and water in the cooker, along with a smashed up clove of garlic and cook it. Just before you serve the rice, dig out the garlic clove, and add into the cooker: a tablespoon of butter, a dash or so of dried dill, the zest of an entire lemon, a little bit of salt and pepper and stir it all together. Let it sit for another five minutes, and voila, Lemon Rice.

This is also good with Shrimp Kabobs. But with shrimp, I like a curried couscous. Which is just as easy as Lemon Rice, but I’ll save it for another day as well.

    I loooooooove grilled salmon. Mmmmmm….. Usually we eat it over plain rice, but next time we grill it, I’m going to try the lemon rice. Thanks!

    We are a non-fish-eating family. My husband is allergic, so I actually don’t have to worry about those pesky side dishes. However, when I first read the title, I thought you were looking for recommendations and since my mom makes salmon, I was going to say lemon rice or perhaps alfredo noodles(garlic flavored).

    That sounds so much better than the directions on the back of the rice bag that I usually follow.

    As far as seafood, I can’t stand the stuff. There are very few exceptions, but otherwise-nope, I just can’t do it.

    What an easy lemon rice recipe!! I’m going to try it tonight! Will let you know how it turns out.

    Those of you who like salmon, have you tried tilapia? The flesh is just as firm and dense as salmon, but the aroma and taste are milder.

    Oh, shoot. Just checked went into the pantry to check the ingredients and saw that I’m out of fresh garlic and garlic powder. Phooey! Next week then.

    I always forget there are people who don’t like fish, or worse, are allergic! I grew up on fish–my dad is an avid sportsman, who lives to go fishing, so we ate it all the time–salmon, steelhead, trout, halibut, sturgeon, you name it, if a man can hook it, Dad was on the prowl.

    Keira, don’t worry about the garlic! I’ve made it without garlic and noticed a huge difference.

    Oh my side of the family loves fishing and eating their catch. I’ve never gotten a taste for it. I love shrimp though. Needless to say, I eat shrimp when visiting my parents and my husband isn’t there hehe.

    My hubby is allergic to shellfish, but I’m good with that. Why? Because when we buy a shrimp ring, it’s ALL MINE!! πŸ˜€

    Nothing beats the grill for seafood, and grilled shrimp is our family’s favorite.

    Is a rice cooker is fool-proof, I’m all over it πŸ™‚

    Lemon rice sounds wonderful. Note to self: give dh the recipe πŸ™‚

    Last night, we caught two huge salmon near the state park in Issaquah. I mean, elephant huge!

    After dh cleaned and gutted….(insert squeaky noise here)…..we—er—he whipped up a browned butter sauce with capers.

    While the grill did its magic, dh made short work of rice with mango chutney and almonds. Not to forget the ‘five a day’, he pulled together braised asparagus with garlic.

    Follow that with blackberries picked from the patch of hillside weeds I call a garden and presto—culinary sunshine!

    Sounds good! I so hear you Andrea on the Shrimp rings hehe.

    I’ve been trying to get my husband to make some asparagus but he refuses. I had never had them until Dallas (conference) and oh man they were so good at that one food place that I don’t remember the name of lol.
